Grown by the Coope Tarrazu, the La Pastora anaerobic natural is the product of the upmost care and attention being applied to a coffee lot. Cherries are picked at 1400-1500m and pulped, and then stored in a fermentation tank for 4 days before being sun-dried on raised beds. The result is a bold but inoffensive acidity with an underlying syrupy body.

The Coope Tarrazu brings together over 5000 smallholders in the Tarrazu region of Costa Rica, which is the only region where coffee production is actually increasing year-on-year. The seasonal employment and uncertainty around the industry is putting a lot of young farmers off the industry in the rest of the country, however the support of initiatives like Coope Tarrazu makes coffee production much more feasible in this region. 

Within the cooperative, 80% of farmers own less than 4 hectares of land, and so having shared access to resources such as agronomy specialists, university research and mills is crucial to their success.
